Fresh beans are critical, and perhaps the most commonly overlooked factor. Once coffee is roasted it begins the process of oxidation, as the carbon dioxide is emitted from the freshly roasted bean, oxygen reaches the product and begins the relatively rapid process of oxidizing and making the coffee stale.  No amount of packaging or processing can prevent this from happening.  Just like you cannot preserve the freshness of freshly baked bread for more than a few hours, coffee undergoes a similar transformation through about day 21.  Most grocery store or coffee shop coffee is a minimum of 10 days old.  The first 10 days are the best so most coffee drinkers don’t even have an opportunity to taste great coffee because by the time they drink it, it’s too late.
